Inspector Notes: Observed black slime/mildew buildup on the inside food contact surface of Hoshizaki automatic ice machine in dining room. CFSM will not serve ice to any customers until it has been properly cleaned.

Inspector Notes: Observed cold holding TCS (Temperature Controlled for Safety) foods above 41° in both front Duke prep units on front line. See temperature log for said items. CFSM stated items put in unit at 9:00 AM. EH checked product temperature at 1:30 PM – 1:40 PM. CFSM discarded all products and stated she will put out new product in ice baths to maintain temperature. Will also check temperatures. CFSM has already put a call in to have the unit looked at and the ice machine cleaned. Contact EH when units are maintaining proper temperature.
