Inspector Notes: Observed cold holding TCS (Temperature Controlled for Safety) foods above 41° in both front Duke prep units on front line. See temperature log for said items. CFSM stated items put in unit at 9:00 AM. EH checked product temperature at 1:30 PM – 1:40 PM. CFSM discarded all products and stated she will put out new product in ice baths to maintain temperature. Will also check temperatures. CFSM has already put a call in to have the unit looked at and the ice machine cleaned. Contact EH when units are maintaining proper temperature.
