Inspector Notes: Observed raw beef steak stored over ready to eat foods: cooked chicken and cooked pork. PIC stated the beef was cooked at 90°F. I explained to her that is par cooking which means the beef is still raw. You can not store raw meat or par cooked meat over any ready to eat foods. COS: PIC removed all of the raw beef.
