Does not use time as a public health control. TCS foods must be hot held at 135° or above. See temperature log for said items. COS: PIC discarded all items.

Inspector Notes: Observed TCS foods held over 24 hours and not date marked in True 2-door unit. Cooked rice, 3/11/23; chicken wings, 3/11/23; beef cheek meat, 3/11/23; and cooked beef, 3/11/23. TCS foods held over 24 hours must be date marked. COS: PIC dated all items.

Inspector Notes: Observed walls at back door and back door in need of cleaning and painting. Also wall at 3-compartment sink in need of cleaning and painting. Suggest using FRP (Fiberglass Reinforced Panels) on the walls. Walls and back door will be cleaned within three days. Walls repainted or replaced with FRP panels by next inspection.
