Inspector Notes: Observed cold holding TCS (Temperature Controlled for Safety) foods above 41° in Delfield Unit. TCS foods must be cold held at 41° or below. See temperature log for said items. COS: PIC discarded all of the product and will not store TCS foods in it until it is maintaining proper temperature. Will use Dukes unit until then.
