Inspector Notes: Observed cold holding TCS (Temperature Controlled for Safety) foods above 41°F in Centaur Plus Unit and walk in cooler. See temperature log for said items. CFSM discarded all items. EH explained to CFSM and PIC that they cannot use the units to cold hold TCS foods until they can maintain temperature for the food at 41°F or below. Contact EH prior to using the units for TCS foods. EH will verify units working properly.
