Inspector Notes: Observed uncovered food in cold holding Berg prep unit in kitchen. Items included cooked chili rellenos, cooked beef, and raw swai fish. All items stored in the bottom section of unit on shelves. COS: Employee covered all items for protections.

Inspector Notes: Observed large chest freezer located in kitchen in poor condition. The lid is coming apart and tape is used to hold it together. Also, rusty on inside. The chest freezer will have to be replaced with an ANSI/NSF commercial approved freezer. A residential freezer is not allowed. ANSI-American National Standards Institute
