Inspector Notes: Observed the Person-In-Charge (PIC) not demonstrating knowledge of food safety and handling procedures. Unable to give correct answers to inspector concerning public health practices and principles applicable to the operation.


4-1A – food separated and protected

Inspector Notes: Observed raw shell eggs on shelf in WIC stored over ready-to-eat boxes of cupcakes, donettes, and muffins (Hostess). Raw eggs can not be stored over RTE food. COS: PIC removed the raw eggs.


4-2B – food-contact surfaces: cleaned & sanitized

Inspector Notes: Observed soiled food contact surface of both microwaves in kitchen at drink machine area. Microwaves have a buildup of food debris all inside of them. PIC stated it will be cleaned by 12/14/22. Hobart meat slicer also very dirty.

Inspector Notes: Observed cold holding TCS (Temperature Controlled for Safety) foods above required temperature of 41°F or below. TCS foods in the True display unit up front. TCS foods must be cold held at 41°F or below. COS: PIC discarded all items and stated he will have the unit looked at before putting anymore TCS foods in the unit.


15C – nonfood-contact surfaces clean

Inspector Notes: Observed soiled/dirty nonfood contact surfaces of shelves (rusty), coolers, freezers, deep fryers, fans, large flour container, sugar container, microwaves, rolling cart, ovens, and etc. PIC stated he is doing a deep cleaning 12/14/22. Rusted shelves will have to be painted or replaced by December 31.


17C – physical facilities installed, maintained, and clean

511-6-1.07(5)(a),(b) – good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)

Inspector Notes: Observed soiled floors and walls throughout kitchen area and WIC. Also observed missing cove molding in kitchen area in several places. PIC stated he will be doing a deep cleaning on 12/14/22. Missing cove molding will also have to be replaced by end of December.
