Inspector Notes: Observed several trays with chicken filets on them and not protected. No barrier between the pans and chicken filets. Metal trays with chicken filets stacked on top of each other with no protection. COS: PIC put wax paper between the chicken and the bottom of the metal trays.

Inspector Notes: Observed wet stacking metal pans and trays stacked on shelf still wet and not separated. Air drying required before stacking. PIC will have it done today.

Inspector Notes: Observed soiled nonfood contact surfaces of two large fans in kitchen, ovens, Metro warmer, etc. PIC will have them cleaned within three days.

Inspector Notes: Observed soiled floors under shelves in storage area and kitchen. Observed some missing/broken cove molding in storage area. PIC stated they will have floors cleaned within three days and address supervisor on the cove molding.
