Inspector Notes: Observed improper cooling of containers of white rice on prep table in kitchen. White rice was checked at 2:50 PM and rechecked at 3:40 PM. Per employee, white rice was sitting on prep table cooling. Employee was not monitoring the rice to see if it was cooling down properly. COS: Employee discarded rice and EH explained proper cooling procedures to employees.


12C – wiping cloths: properly used and stored

Inspector Notes: Observed several wet wiping cloths used to wipe down tables laying on food prep tables and not stored in sanitizing solution between uses. Explained again procedures for storing wet wiping cloths in a sanitizing solution between uses. COS: Employee removed all wet wiping cloths.


15C – nonfood-contact surfaces clean

Inspector Notes: Observed soiled nonfood contact surfaces of the flour, sugar, cornstarch, and MSG storage containers and soiled shelves throughout kitchen. Soiled inside and out of Turbo Air Cooler. PIC will have cleaned within seven days.

511-6-1.07(5)(a),(b) – good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
