Inspector Notes: CFSM is not training or supervising employees on food safety, handling, or sanitary techniques on a daily bases. Employees are not being properly trained by CFSM. CFSM/PIC will have all employees retrained and will start monitoring more for food safety.

Inspector Notes: Observed soiled food contact surfaces of automatic ice machine, pizza screens with food debris, and automatic dishwasher not feeding any sanitizer nor getting to proper temperature. Reading currently is 98° when tested by gauge. PIC will have working properly by 09/30/20. Will have to use 3-compartment sink until then. Call EH when repaired.

Inspector Notes: Observed a large plastic cup used as a scoop in a large container of sugar. Cup has no handles. Scoops must have handles to be stored properly. COS: Cup was removed and a scoop was put in sugar properly with handle up.

Inspector Notes: Observed automatic dishwasher not reaching proper temperature of 120°F when using chemical sanitizer (chlorine). Dishwasher ran more than 6 times while observed. Reading was 98°F-99°F. My reading was 98°F. Cannot use dishwasher until operating properly. No test strips. Will have test strips by 09/30/2020 and dishwasher operating properly.
