Inspector Notes: Observed automatic dishwasher not reaching required temperature of 120°F for chemical sanitizing. Dishwasher ran three times never reaching 120°F. Dishwasher only got to 110°F. Recommend a booster heater. Laredo’s will use 3-compartment sink until dishwasher is operating properly. Call EH when dishwasher is operating properly.

Inspector Notes: Observed improper storage of utensil between uses. Knife stored between prep unit and hot holding unit. COS: Employee removed knife and replaced it. EH discussed proper storage of utensils between uses.
