Inspector Notes: Observed soiled food contact surface of the automatic Manitowoc ice machine. Observed inside ice machine has a black/slime mildew buildup. PIC will have it cleaned today.

Inspector Notes: Observed cold holding TCS (Temperature Controlled for Safety) foods above 41°F in Turbo Air Prep unit located in kitchen. TCS foods must be held at 41°F or below. See temperature log for said items. COS: PIC discarded the food and has called to get the unit fixed and operating properly.

12B – personal cleanliness

Inspector Notes: Observed employee in kitchen handling/preparing food without any hair or beard restraint. Hair longer than 1/2″ and beard longer than 1/2″ must wear proper hair restraints when handling food. PIC will discuss proper hair restraints with employee today.
