Inspector Notes: Observed raw eggs stored over ready to eat food in the Berg 1-Dr Prep Unit located in kitchen and the Berg Upright unit located in the back room prep area. Observed raw eggs over ready to eat chicken in kitchen unit and observed raw eggs over ready to eat potato salad, chicken salad, baked beans, and Brunswick stew in back prep area. COS: PIC removed all of the raw eggs and properly stored them.

Inspector Notes: Observed soiled food contact surface of Manitowoc automatic ice machine in kitchen. Observed pinkish/black slime. PIC stated it will be cleaned within two days. Will not serve ice to customers.

Inspector Notes: Observed soiled, damaged walls throughout kitchen area. Walls need to be cleaned and floors need to be cleaned up and behind equipment; prep coolers, freezers, shelves, cold holding units and upright units. Discussed damaged walls with PIC. They plan to redo the walls in the near future.
