Inspector Notes: Observed soiled food contact surface of Manitowoc automatic ice machine. Observed black mildew inside unit. PIC will have it cleaned by 04/26/2024.

Inspector Notes: Observed cold holding TCS (Temperature Controlled for Safety) foods above 41°F in walk in cooler. TCS foods must be cold held at 41° or below. See temperature log for said items. COS: PIC discarded all of the product. Items were discarded. PIC stated they will not use WIC until it is maintaining proper temperature. CFSM will have unit looked at.


12C – wiping cloths: properly used and stored

Inspector Notes: Observed wet wiping cloths used to wipe down prep tables, counters, and equipment not stored in sanitizing solution between uses. Wet wiping cloths must be stored in sanitizing solution between uses. COS: PIC removed all wet wiping cloths.
