Inspector Notes: Observed cold holding TCS (Temperature Controlled for Safety) foods above 41°F in the Atosa Prep Unit. See temperature log for said items. TCS foods must be cold held at 41°F or below. Employee put items on ice since the sliced tomatoes were just sliced around 11 AM. Employee also explained to EH that she did temp the food this morning and it was not above 41°F. She will monitor the unit.
