Inspector Notes: Observed uncovered key lime pie, large pan of pasta, and large container of cut lettuce. All food in storage must be covered to protect from sources of contamination. COS: Employee discarded pie and pasta and covered the lettuce.

Inspector Notes: Observed several wet wiping cloths laying on food prep tables and not stored in sanitizing solution between uses. Cloths are used to wipe down prep areas. Cloths must be stored in sanitizing solution between uses. COS: Employee removed all wet wiping cloths. COS: Employee removed all wet wiping cloths.

Inspector Notes: Observed a lot of metal pans in dishwashing area stacked wet. Pans are not air dried. Can not stack pans, plates, cups, or any other items wet. Must be air dried before stacking. PIC stated she will have pans separated so that they can air dry today.
