Inspector Notes: Repeat Violation: Observed a lot of the pizza pans and all of the other pans encrusted with grease/food deposits. Food contact surface with heavy build up on them. Observed a magnetic knife holder (Food contact surface) in dishwashing area holding knives and dirty/soiled. CFSM will have all of the items cleaned by 10/25/2022.

Inspector Notes: Observed wet stacking of plastic containers on shelf in dishwashing area. CFSM will retrain today employees on the process of air drying before stacking.

Inspector Notes: Observed soiled nonfood contact surfaces of the Traulsen freezers, dishwasher, deep fryer, shelves in front and back area, coolers, proofer, retarder all in need of cleaning. All nonfood contact surfaces. CFSM will have three to five days to clean equipment.

Inspector Notes: Observed soiled walls and floors in dishwashing area, along wall at three compartment sink, deep frying station, and back wall in cooler area. Observed the bottom of the back door is not sealed to prevent insects and rodents from entering. Will have five to seven days to deep clean and seal back door to prevent insects from entering. NOTE: Cove molding coming off walls in dining room.
