Inspector Notes: Observed cold holding TCS (Temperature Controlled for Safety) foods in Duke prep unit at the front serving line above required temperature. See temperature log for said items. COS: PIC removed all of the food and discarded it. Food has been on prep unit since 7:00 AM. PIC discarded all food and will use ice bath for the new product until unit has been repaired or working properly.
