Inspector Notes: Observed a large box of raw beef soup bones in the hand washing sink. Hand washing sink was blocked and could not be used. There is only one hand washing sink. COS: Beef was removed.

Inspector Notes: Observed TCS (Temperature Controlled for Safety) food (cooked beef) in Turbo Air Unit in kitchen date marked 08/01/21. The item is past the seven day date marking. Cooked beef cannot be held over seven days of date marking. COS: Item was discarded.


12C – wiping cloths: properly used and stored

Inspector Notes: Observed wet wiping cloths laying on food prep table between uses. Wet cloth used to wipe down and sanitize food prep table. Wiping cloths must be stored in a sanitizing solution between uses. COS: Employee removed wet cloths and put in a bucket of sanitizing solution.
