Inspector Notes: Observed ready to eat TCS(Temperature Controlled for Safety) foods held over 24 hours and not date marked. Several bags of cooked pulled pork possibly cooked 03/22/2021, cooked pork sausage cooked 03/23/2021, and cooked pork with unknown cook date. Explained date marking to PIC Skylar S. Smith. COS: All items were discarded by PIC.


11C – approved thawing methods used

Inspector Notes: Observed improper thawing of raw shrimp and fish in meat sink. Items were submerged in water and not in colander or under running water. COS: Items were removed.
