Inspector Notes: Observed several metal pans on the shelf in the dishwashing area. Stacked wet pans have not been dried before stacking them. Can not wet stack. PIC will discuss and train employees about air drying before stacking the metal pans.

Inspector Notes: Observed a fan very dirty/soiled and a lot of build up in the kitchen on top of ceiling section blowing towards the kitchen. PIC will have fan cleaned today.
