Inspector Notes: Observed cold holding TCS (Temperature Controlled for Safety) foods above 41°F at the salad bar. See temperature log for said items. TCS food must be cold held at 41°F or below. If the ham had been thawed earlier it should not have been put on the salad bar until it is 41°F or below. COS: CFSM discarded the ham.
