Inspector Notes: Repeat Violation: Observed cold holding TCS (Temperature Controlled for Safety) food above 41°F in the walk in cooler, Randell Prep unit and Center Line units. See temperature log for said items. COS: PIC discarded all of the product and will monitor all units. Cause of incorrect temperature was WIC door was left open and not turning the Randell unit on before cold holding raw chicken.

Inspector Notes: Observed wet stacking of a lot of metal pans on shelf by 3-comp sink. Can not wet stack metal pans, plastic, etc. PIC discussed with employees and properly air dried pans.

Inspector Notes: Repeat Violation: Observed soiled nonfood contact surfaces of shelves, breading container, inside and out of coolers, freezers, Duke warmer, etc. Will have everything cleaned within three to five days.

Inspector Notes: Observed grease buildup under and behind deep fryers, soiled walls and floors throughout kitchen area, and cabinet doors missing at front counter area. General cleaning needed. Will have it cleaned within three to five days.
