Inspector Notes: Observed encrusted baking pans; food contact surfaces of the pans. Observed encrusted food deposits on the inside food contact surfaces of hot holding units (Alto-Sham and Winston Warmer).

Inspector Notes: Observed cold holding TCS (Temperature Controlled for Safety) foods above 41°F. See temperature log for said items. All TCS food must be cold held at 41°F or below. COS: CFSM discarded all of the items and has called in General Heating & Air to look at the WIC. Will not use WIC until it is working properly.

Inspector Notes: Observed wet stacking metal pans/trays on shelf in kitchen. There were several stacks of wet metal pans. CFSM will have them properly air dried by end of day.

Inspector Notes: Observed encrusted grease deposits on all of the deep fryers and grills. Observed soiled nonfood contact surfaces of all the shelves, all the warmers, all of the fans, all of the coolers/freezers. Deep, deep cleaning is needed. CFSM will have everything cleaned within five to seven days.

Inspector Notes: Observed toilet in women’s restroom loose from the floor. The toilet moves. CFSM will have it repaired within two to three days. Observed a strong sewer smell coming from the floor drains that also needs to be addressed.

Inspector Notes: Observed soiled floors and walls throughout the kitchen area. Build up of grease and debris under and behind all of the equipment–fryers, warmers, coolers, and freezers. Deep, deep cleaning needed. Will have floors and walls cleaned within five to seven days.

Inspector Notes: Observed live bugs/roaches in the kitchen area, baking station, back area on prep table, under shelves, at the buffet, in back area, and WIC area. CFSM stated he will contact Adams Pest Control today to have them here to start treating for insects and possible rodent control.
