Inspector Notes: Observed containers of raw beef, pork, and chicken stored over/on top of ready to eat deli pork ham. Can not store raw meat over ready to eat product such as deli ham for the salad buffet. COS: PIC removed the ready to eat deli ham.

Inspector Notes: Observed several containers of TCS foods in coolers held over 24 hours and not date marked. None of them had any dates on them at all. COS: PIC had employee put dates on all of the TCS foods: three containers of sliced tomatoes, 3 containers of cooked chicken, and two containers of cut lettuce and two containers of cooked mac & cheese.

Inspector Notes: Observed employee with a beard that is over 1/2″ working in kitchen handling and preparing food. Must wear proper hair restrains when in the kitchen handling food. COS: Employee put on a beard net.

Inspector Notes: Observed soiled nonfood contact surfaces of all the cooking equipment: stove, oven, grills, inside all coolers and freezers, rolling carts, warmers, shelves, etc. The whole kitchen is in need of a deep cleaning. Will have everything cleaned within five to seven days.


17C – physical facilities installed, maintained, and clean

511-6-1.07(5)(a),(b) – good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)

Repeat: No

Inspector Notes: Observed soiled floors, walls throughout kitchen area, soiled and damaged ceiling tiles, damaged walls throughout kitchen area, and a lot of grease on walls and equipment and hood system. Will have five to seven days to address the condition of the floors, walls, and ceilings. Some areas will have to replace damaged or missing cove molding and FRP panels.
