Inspector Notes: Observed refrigerator in storage room and refrigerator at breakfast bar did not have thermometers as required by rules. Thermometer requirement was discussed with manager/PIC who stated he will install thermometer in both refrigerators as soon as possible.

Inspector Notes: Observed facility did not have test strips or kit to accurately measure sanitizer concentration when sanitizing dishes/utensils in three compartment sink as required by rules. Discussed test strips requirement with manager/PIC. Discussed use of bleach or quaternary ammonia as a sanitizer. PIC stated he will order bleach test strips. PIC looked up test strips online at time of inspection to ensure the correct strips were ordered. Discussed how to sanitize in three compartment sink using bleach until test strips are delivered.
