Inspector Notes: Observed cold holding TCS (Temperature Controlled for Safety) food above 41° in the True unit at the raw chicken station in kitchen. TCS food must be cold held at 41° or below. See temperature log for said food items. COS: PIC discarded the food. Also lettuce and boiled eggs were discarded.

Inspector Notes: Observed hold holding TCS (Temperature Controlled for Safety) foods below 135°. TCS foods must be hot held at 135° or above. See temperature log for said items. COS: PIC discarded all the food product. EH discussed hot holding procedures to employees.

Inspector Notes: Observed wet stacking of metal pans on shelves at 3-compartment sink. All pans & utensils must be air dried before stacking. PIC stated he will retrain employees today.

Inspector Notes: Observed soiled nonfood contact surfaces of metal pans, coolers, freezers, shelves throughout kitchen area, hot holding units, cold holding units, and dispensers. PIC will have everything cleaned within 10 days.

511-6-1.07(5)(a),(b) – good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)

Inspector Notes: Observed grease and debris under shelves, warmers, fryers, coolers, and freezers. Observed walls in kitchen area with grease on them. A deep cleaning is needed. PIC stated it will be done within 15 days.
