Inspector Notes: Observed ready to eat TCS (Temperature Controlled for Safety) foods held over 24 hours in Avantco refrigerator and not date marked. Foods were sliced smoked ham (cooked on 04/09/2021) and sliced turkey (cooked on 04/08/2021). Any TCS food held over 24 hours must have a date. COS: PIC put dates on the food.


15C – nonfood-contact surfaces clean

Inspector Notes: Repeat Violation: Observed soiled nonfood contact surfaces of sugar, flour, cornmeal, and etc. storage containers and shelves. PIC will have them cleaned within three days.
