Inspector Notes: Observed PIC not monitoring receiving food; not verifying proper temperature for TCS (Temperature Controlled for Safety) foods when received. PIC stated he has not been trained or told to monitor receiving temperatures. Observed cooling not being met. Chicken wings cooked (par cooked?) on 11/13/19 and not monitored to make sure the wings have gotten to the right temperature in the right time frame. PIC stated they have not been trained on cooling procedures. EH explained proper procedures to PIC/employee.

4-2B – food-contact surfaces: cleaned & sanitized

Inspector Notes: Observed soiled food contact surfaces of Samsung microwave and magnetic holder above three compartment sink holding clean utensils. The magnetic holder has to be cleaned every 24 hours. Observed a build up of debris/rust. PIC will have it cleaned today.

6-1C – proper cooling time and temperature

Inspector Notes: Observed a large container of chicken wings in WIC that was prepared/cooked on 11/13/19. Cooling procedures have not been met. Chicken wings were not monitored to assure they were cooled down properly. Should be 135°F-70°F within two hours, and 70°F-41°F within four hours. PIC stated they have not been trained on cooling procedures. EH discussed/trained employee on proper cooling procedures. COS: PIC discarded all of the chicken wings.

15C – nonfood-contact surfaces clean

Inspector Notes: Observed soiled nonfood contact surfaces of all the shelves in back and front, racks, rolling carts, microwave, Norlake Unit refrigerator, and Nemco warmers. PIC will everything cleaned by 11/18/19.

17C – physical facilities installed, maintained, and clean

511-6-1.07(5)(a),(b) – good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)

Inspector Notes: Observed trash/debris/grease under and behind cooking equipment (deep fryers and cooker) in the kitchen. PIC will have the floors cleaned by 11/18/19.
